This is the smallest of the three jacks and it is a fish that is also farmed extensively in Japan. It is best for Sushi during the Summer when it is spawning.

Anago are often simmered for sushi, or deep-fried as tempura, & barbecued with kabayaki sauce.  Anago is also slightly less rich and oily than unagi. Anago has a very soft texture and sweet taste.

​Alfonsino/Red Snapper

Golden-eye sea bream. The name comes from its big and golden eyes. While it is not a sea bream, it is often used as an alternative to sea bream. Kinmedai is a white fleshed fish rich in protein, minerals, and fat. It is a source of vitamins B1, B2 and iron.
